Space Requirements for a Bakery Tray Washer
Small commercial kitchens are tight. Here's exactly how much space a JD-3 needs — and how to integrate it without losing prep area.
Basic Footprint
The JD-3's machine dimensions are 804 × 816 mm at the base. Plan for 850 × 850 mm of dedicated floor space (machine + minor positioning clearance).
Required Clearances
- Front clearance (operator side): 600 mm minimum. This is where the operator stands to load and unload racks.
- Right side clearance: 100 mm minimum for ventilation. 400 mm recommended if this is your service-access side.
- Left side clearance: 100 mm minimum.
- Rear clearance: 150 mm minimum for plumbing and electrical connections.
- Vertical clearance (above): 2,200 mm minimum so the hood can lift fully.
Total functional space including clearances: approximately 1,450 mm wide × 1,500 mm deep.
Loading Configuration Examples
Layout 1: Adjacent to 3-bay sink
Position the JD-3 to the right of your existing 3-bay sink. Use the sink for pre-scrape and rinse, the JD-3 for wash. Total combined linear space: ~3.5 m. Works in most small commercial kitchens.
Layout 2: Dedicated dish corner
Position the JD-3 in a corner of the kitchen with a small staging counter to the side. Operator pivots between the staging counter and the JD-3. Linear space: ~2 m. Best for very small bakeries with limited floor area.
Layout 3: Pass-through dish pit
For bakeries with separate prep and service areas: install the JD-3 on a wall between the two, with loading on the dirty side and unloading on the clean side. Requires custom millwork. Best practice for hygiene-sensitive operations like patisserie.
Floor Surface Requirements
- Level surface — JD-3 has adjustable feet for ±20 mm leveling
- Waterproof flooring (epoxy, sealed tile, stainless) — water will splash during loading/unloading
- Drain in the floor recommended (most commercial kitchens already have one)
- Non-slip surface — wet floors are common in dish areas
Ventilation
The JD-3's sealed hood reduces steam output by ~70% versus older machines, but some humidity escape is unavoidable. Recommendations:
- Position the JD-3 within reach of your existing kitchen exhaust hood (most common solution)
- For dedicated dish rooms: a small extraction fan (200 CFM) is sufficient
- Avoid positioning the JD-3 directly under a low ceiling without ventilation — humidity will accumulate
Plumbing
Required within 1.5 m of the JD-3 location:
- Cold water supply with G 3/4" connection point
- Floor drain or wall drain (G 1½" or larger)
- If the drain is above the machine: optional drain pump can push wastewater up to 2 m vertically
Power Outlet Location
The 380V three-phase outlet should be:
- Within 1.5 m of the JD-3 position
- Wall-mounted, not floor-mounted (water splashing)
- Above 600 mm height to stay clear of mop water
- Accessible without moving the machine (for emergency disconnect)
If Your Kitchen Is Very Small
For kitchens under 30 m² where dedicating 1.5 × 1.5 m to a dishwasher feels impossible:
- Consider replacing your 3-bay sink with a 1-bay + JD-3 combo. You retain the prep sink function and add the dishwasher in roughly the same floor space.
- Consider a wall-mounted shelf above the JD-3 for racks. Vertical storage saves floor space.
