Short answer: approve the rack pattern, not just the machine
A tray washer may have enough chamber space for sheet pans, bowls, cake pans, and small tools, yet a particular combination can still fail. A deep bowl can cast a spray shadow across a tray; nested pans can hide residue; a loose whisk can turn and obstruct a wash arm. The question is therefore not only “Does each item fit?” but “Does this exact arrangement preserve spray, drainage, restraint, and material compatibility?”
Start with a separate acceptance result for every ware family. Combine families only after each one passes alone, then freeze a photographed mixed-load pattern that operators can repeat. If changing one item changes the spray path or chemistry requirement, it creates a new load that needs approval.

1. Fit and clearance
Measure the complete item, including handles and rims. Close the hood and confirm nothing touches the chamber, door, or rotating wash path. “It can be pushed in” is not clearance.
2. Spray exposure
Trace a direct path from the wash arms to every soiled face. Look from arm level, not only from above. If one item becomes a shield, change the rack pattern or split the load.
3. Drainage
Orient concave items so wash and rinse water leave them. Reject stable puddles, nested cavities, rolled rims that retain debris, and any orientation that needs hand-emptying after the cycle.
4. Restraint
Secure light and small items in the correct holder. The approved pattern must remain valid after pump force begins; a neat arrangement before the door closes is not enough.
5. Material and soil compatibility
Confirm tray, coating, utensil, and bowl care rules against the same detergent, dose, and cycle. Separate items that need different chemistry or whose residue requires a different pre-treatment.
Run a repeatable mixed-load acceptance test
Test the hardest normal load, not a showroom arrangement chosen because it is easy.
- List each ware family, material, coating, dimensions, normal soil, and permitted pre-treatment.
- Pass each family alone before combining it with another family.
- Photograph the proposed rack from the front, both sides, and above; mark every fixed position.
- Record detergent, dose, cycle, orientation, holder, and any scrape or soak step.

- Repeat the same pattern with other representative used items. Approve it only when operators can reproduce the result without improvising.
Turn the result into a purchasing and operating rule
Ask the supplier to state which individual ware families were tested and which mixed rack patterns were actually demonstrated. Put the approved photos, loading map, chemical settings, and rejection conditions into commissioning records and operator training.
A mixed load saves time only when it passes first time. If it creates inspection uncertainty, trapped water, repeated handling, or rewashing, dedicated batches are the faster and more defensible operating plan.
